It makes sense that they would have to consume the dragon part to get rid of the dragon soul.

it will be explained, there are strict rules to it. Kinda, as long as their body is mostly complete and they are still inside the dungeon. The mangaka did a great job explaining the mechanics and its a major plot point of why ppl can be resurrected in the dungeon.
Dungeon Meshi plays with a lot of tropes common in ttrpgs, but it is not really based on DnD specifically. It expands on the idea of old-school dungeons with lots of (more or less randomly placed) traps and monsters by making the dungeon an ecosystem and giving the place a backstory that explains this design.

I remember commenting a few days ago that, if Dungeon Meshi reminded me of any game, it would be Wizardry. Good to see that I was spot on. Seriously, for a Western franchise that has been all but forgotten in the West, Wizardry is extremely influential in Japan. Incidentally.
